cinnamon apple muffins

Ingredients cinnamon apple muffins


1 cup all-purpose flour (+ 1 tsp for coating apples)
3/4 tsp baking powder
1/4 tsp salt
2 tsp ground cinnamon (+ 1/4 tsp for coating apples)
1 cup apples - peeled and diced
1/4 cup butter - room temperature
1/2 cup sugar
1 egg
1 tsp vanilla extract
1/4 cup milk
topping
2 tbsp butter - melted
2 tbsp sugar mixed with 1 tbsp ground cinnamon

how to make cinnamon apple muffins


Preheat oven to 375°F.


Grease a 6 capacity muffin pan.


Sift together flour, baking powder, salt and cinnamon.


In separate bowl, toss apples with flour and cinnamon to coat.


In separate bowl, beat butter and sugar for 2-3 minutes.


Beat egg into butter mixture until incorporated.


Stir vanilla into butter mixture.


Gently fold flour mixture and milk in, alternating between the two.


Gently fold in apples.


Scoop into muffin pan and bake 25-30 minutes.


Remove from oven and cool slightly.


Dip muffins tops in melted butter, then in cinnamon sugar mixture.


Place on wire rack to cool completely.
