Ingredients crema de zanahoria cream of carrot
1 1/2 lb carrots
1 onion chopped
2 clove garlic cloves
1 small potato
1 salt
1 pepper
1 vegetable bouillon cube
1 chopped parsley

Bring carrots and potato to boil in medium pot. Cook until tender.
When soft, transfer vegetables and two cups of the liquid to blender with vegetable bouillon cube.
Blend until smooth.
Saute onion and garlic in pot until onions are translucent.
Transfer sauteed onions to blender and liquefy.
Add salt and pepper to taste. Garnish with parsley.
