Ingredients loaded potato and chicken casserole
4 Russet potatoes cubed
3 chicken breasts uncooked and cubed
1 lb bacon
1 small onion chopped
2 cup shredded fiesta blend cheese
2 tbsp butter sliced
1 salt and pepper
1 sliced green onions
1 ranch dressing

Preheat oven to 350°. Cook bacon until crisp, saving a few tablespoons of grease. Cook onion in grease until soft. Crumble bacon when cool enough to handle.
Place potatoes in a 13x9 inch baking dish. Drizzle with olive oil and season with salt and pepper. Stir to coat potatoes.
Mix in bacon, onion, chicken and cheese. Lay slices of butter over casserole.
Cover with foil and bake for 60 minutes. Uncover and bake 15-20 more minutes or until done. Top with green onions. Serve with ranch dressing.
