Ingredients maple dijon mustard and glazed pan seared atlantic salmon


1 tbsp lemon rind
1 cup Pure maple syrup
6 tbsp lemon juice
2 tbsp grain dijon mustard
2 tbsp vegetable oil
2 tbsp soy sauce
2 clove garlic
1 tsp black pepper
8 salmon fillets

In a small bowl, whisk together maple syrup, lemon juice, mustard, soy sauce, vegetable oil, garlic and pepper.


Put salmon fillets in a shallow dish in a single layer.


Add the maple marinade, turning to coat.


Cover with plastic wrap.


Refrigerate for 1 hour, turning once.


Prepare a hot non-stick pan.


Transfer salmon fillets to a plate, shaking off excess marinade.


Transfer the marinade to a saucepan and bring to a boil.


Reduce heat to low, and stir occasionally until the marinade is thick and has reduced to 1/2 cup.


Pan sear the salmon for 5 minutes until cooked in the centre.


Brush fish with marinade before serving.
