Ingredients pancake mini muffins
3 cup all-purpose flour
1 tbsp baking powder
3/4 tsp salt
2 1/2 cup milk
1 tbsp white vinegar
2 eggs
1 tbsp vanilla extract
4 tbsp melted butter
1 Blueberries - optional
how to make pancake mini muffins
Preheat oven to 425º. For a softer muffin bake at 400º for 11 minutes.
Sift together dry ingredients. Set aside. Stir together milk. And vinegar. Let set for 1 minutes. Whisk in eggs and vanilla.
Combine dry ingredients with wet ingredients. Then stir in melted butter. If batter is to thick stir In a little milk.
Spray a mini muffin pan generously . Fill 2/3 full. If using blueberries drop 2-3 in each one.
Bake 8-9 minutes or until golden brown on top. Let sit 1-2 minutes. Then turn them iut to cool. Serve warm with syrup.
